Prep Time: 20 mins | Bake Time: 25 mins | Servings: 12–15 bars.

Ingredients;

For the Carrot Cake:

  2 cups all-purpose flour
 1 tsp baking powder
 ½ tsp baking soda
 1 tsp ground cinnamon
 ½ tsp ground nutmeg
 ½ tsp salt
 ¾ cup granulated sugar
 ¾ cup brown sugar (packed)
¾ cup vegetable oil or melted coconut oil
 3 large eggs (room temperature)
 1 tsp vanilla extract
 2 cups freshly grated carrots
(Optional add-ins: ½ cup chopped walnuts/pecans or raisins)

For the Cream Cheese Frosting:

8 oz (225g) cream cheese (softened)
 ¼ cup unsalted butter (softened)
 2 cups powdered sugar (sifted)
 1 tsp vanilla extract
1–2 tbsp milk (if needed to adjust consistency)
(Optional decoration: Small marzipan/fondant carrots or chopped nuts for topping)

Instructions

1. Prep the Oven & Pan
Preheat your oven to 350°F (175°C). Line a 9x13-inch baking pan with parchment paper, leaving a slight overhang on the sides for easy removal later. Lightly grease the paper.
2. Combine the Dry Ingredients
In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Set aside.
3. Mix the Wet Ingredients
In a large mixing bowl, beat together the granulated sugar, brown sugar, oil, eggs, and vanilla extract until smooth and well combined.
4. Bring the Batter Together
Gradually fold the dry ingredients into the wet mixture until just combined. Gently fold in the grated carrots (and nuts/raisins if using). Avoid overmixing to keep the texture soft and tender.
5. Bake to Perfection
Spread the batter evenly into your prepared baking pan. Bake for 22 to 28 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake to cool completely in the pan before frosting.
6. Whip Up the Frosting
In a bowl, beat the softened cream cheese and butter together until smooth and creamy. Gradually add the powdered sugar and vanilla extract. Beat until light and fluffy.
7. Frost, Decorate & Serve
Once the cake is fully cooled, spread the cream cheese frosting evenly over the top. Add decorative sugar carrots or chopped nuts if desired. Slice into squares and enjoy!

Pro Tips for the Best Results:

Use Freshly Grated Carrots: Avoid pre-shredded store-bought carrots; grating your own adds maximum moisture and flavor to the batter.

Cool Completely: Ensure the base is 100% cool before adding the frosting, or the cream cheese layer will melt off!
Storage: Keep these bars in an airtight container in the refrigerator for up to 5 days.
